Soupy noodles with wonton dumplings make a very satisfying breakfast or lunch choice. This Cantonese-style dish probably came by way of Hong Kong, where it is a street food item. Fujian chefs will enrich their wontons with crab meat for a more robust flavour. As a soupy noodle dish, it is a complete meal in itself. You can use a light pork, chicken or fish stock: a traditional one is made with dried anchovies (known as ikan bilis in South-east Asia).
