Within Chinese symbolism, there are endless references to acquiring wealth, wisdom and longevity — the three most desired objectives in the culture. For instance, noodles are eaten for the promise of longevity. Wisdom? Well, it can only come with longevity! Green vegetables are often likened to jade, which symbolizes wealth.

Ingredients

  • 200 g/7 oz mustard greens (sian chai), cut into 4cm/1½in squares
  • 30 ml/

Method

  1. Blanch the greens in a pan of boiling water for 20 seconds, then drain, rinse with cold running water and drain again. (This helps to preserve their green colour.)
  2. Heat the oil in a wok and fry the garlic for 20 seconds. Add the greens and mushrooms and stir-fry over high heat for 2 minutes. Add the soy sauce, pepper and wine or sherry and stir for 1 minute.
