Many vegetarian dishes in China feature tofu, making the most of the different types available such as soft, firm, fried or pickled tofu, all of which have a high protein content. Typical of Hangzhou cooking, this dish is highly flavoured and on the salty side, and is intended to be eaten alongside a bowl of congee. It is a comfort food from peasant origins. In this recipe preserved beancurd seasons the sauce which is a base for two other kinds of beancurd or tofu — fried golden brown tofu puffs, and dry tofu wafers.
