Those from eastern China tend to favour extraordinarily sweet dishes, and many of their desserts, especially this one from Shanghai, are laden with sugar. If you do not like such intensity, use less sugar, as it will not alter the intrinsic taste too greatly. Sweet potato is already naturally sweet. Look for varieties with orange or yellow flesh, as they tend to have the best flavour for this dish.
