Matrimony vine also goes by the name of boxthorn on account of the sharp thorns at the base of each leaf stalk. Legend has it that if it is planted close to a house, marital discord will follow — hence the name ‘matrimony vine’. Only the spinach-like leaves are eaten.

Ingredients

  • 200 g/7 oz pig’s liver
  • 4–6 stalks of matrimony vine

Method

  1. Put the liver in the freezer for about 10 minutes, until it is firm enough to slice very finely with a sharp knife.
  2. Meanwhile, prepare the matrimony vine. Pull the leaves away from the stems, taking care to avoid the thorns. Wash the leaves thoroughly under cold running water and drain them in a colander.
