The light stock for this wonton soup derives its richness from dried fish like sprats or anchovies. While Chinese stores sell instant wonton soup stock, it is easier — and more satisfying — to make your own, not to mention tastier and likely to be of better quality. Extra flavour comes from the wontons, which are filled with a delicious seafood mixture.
