These dainty little bites use basically the same dough as for chive dumplings, but their taste and texture is totally different. This is thanks to the unusual filling, with its interplay of succulent pork, crunchy nuts and aromatics. These are a typical Shantou dim sum.

Ingredients

  • 150 g/5 oz/ cups wheat starch

Method

  1. Put the wheat starch in a non-stick pan. Add the water and oil and cook over low heat, stirring occasionally, until very thick. Remove from the heat and leave to cool for 15 minutes.
  2. Meanwhile, make the filling. Heat the vegetable oil in a pan and fry the pork for 2 minutes. Add the water, peanuts, soy sauce, sesame oil and ground black pepper. Stir for 3 minut
