Shantou restaurants take great pride in steamed fish dishes such as this one. The addition of sour plums is a particularly inspired touch, especially when salmon, pomfret or sea bass is used, as the tartness of the plums really cuts the rich oils in the fish and perfectly balances the dish, as well as bringing a different texture to the plate.
