A small county town on the east coast of Hainan Island, Wenchang has two major claims to fame. The first is its excellent seafood, and the second is as the ancestral home of two sisters, Song Qingling and Song Meiling, the wives of Generals Sun Yat Sen and Chiang Kai Shek respectively.

  1. Clean the crabs and remove the belly flap from each, together with any fibrous tissue attached to it. Prise the shell away from the body and cut each crab into four pieces. Crack the large claws for easy removal of the meat after the crabs are cooked.
