When scallops are fresh, they taste exquisite when simply steamed in their shells. Here, they are served with a little flavoursome sauce made from Chinese wine, black bean sauce and fresh ginger, which perfectly complements the sweet, tender flesh of the scallops.

Ingredients

  • 8 scallops, preferably in the shell
  • 30 ml/2 tbsp Chinese Hsiao Hsing wine

Method

  1. Preheat the oven to 160°C/325°F/Gas 3. Spread the scallops in a single layer on a baking sheet. Heat them for a few moments until they gape, then remove them from the oven.
