This classic, must-have restaurant dish has an intriguing, universal appeal, which can perhaps be explained by the pleasing contrast of the succulent chicken and crunchy cashews, and similar interplay between the sweetness of the carrots and the saltiness of the soy sauce.

  • 1 carrot, about 115 g/4 oz, cubed

Method

  1. Bring a small pan of water to the boil. Add the cubed carrot. Blanch for 1 minute, then drain and set aside.
  2. Heat the oil in a wok and fry the garlic over medium heat until light brown. Do not let it burn or it will taste bitter.
