The fruity sweetness of plum sauce is the perfect foil for meat and poultry, either on its own or as an ingredient in a sweet-and-sour sauce. Here, it partners tender chicken that is coated with cracker crumbs and quickly deep-fried to give a flavoursome and crisp crust.
