Chicken & Banana Rolls
Bananas do not often turn up in savoury cooking, but in Hong Kong and Hainan Island, the fruit has a special place in the kitchen. In this unique dish, sweet chunks of banana are wrapped in succulent chicken and deep-fried, making an unusual but delicious snack.
Ingredients

Method
- Slice the chicken breasts diagonally into 3–4 thin escalopes. Put these between pieces of clear film/plastic wrap and pound lightly with a meat mallet to tenderize.
- Put the beaten egg in one shallow bowl and spread out the cornflour in another.
- Slice each banana into 3–4 lengths. Dip each piece in a little egg and place on an escalope. Fold up and ove
