The rub for this recipe isn’t based on a Chinese product, but rather on a ginger wine that has been made in England since the 18th century. It is widely available, but gingered Chinese wine or sherry can be substituted. Steaming the chicken makes it tender, and the ginger gives it flavour.

Ingredients

  • 1 whole chicken, about 1.6 kg/ lb
  • 30 ml/

Method

  1. Place the chicken on a deep plate that will fit in your wok or steamer. Put the ginger in a bowl and add the salt. Stir in the wine or sherry. Spread the mixture over the chicken and rub it in well.
  2. Sprinkle the spring onion and chilli strips evenly over the chicken, then place the plate containing the chicken in the steamer or wok. Cover and steam for 1 hour o
