The name of this dish stems from the use of broccoli and chicken, which symbolize jade and silver. Pretty, tasty and nutritious, it is a star item in most Chinese restaurants around the world. Traditionally, Chinese Jinhua ham is used but this is rarely found outside China and any smoked or honey-cured ham can be used to good effect.

Ingredients

  • 2 skinless chicken breasts
  • 250 ml/8 fl oz/1 cup

Method

  1. Put the chicken breasts in a pan and pour over the water. Bring to the boil, lower the heat and simmer for 10 minutes or until cooked through. Lift out the chicken portions with tongs and put them on a board. Reserve the cooking liquid in the pan.
  2. Slice the ham into 2.5 cm/1 in-wide strips and cut the spears of broccoli into strips of similar length. Slice each
