You see this vermilion-coloured bird hanging in every Chinese restaurant window, usually with the head still on. There is a reason for this: Chinese-Taoist belief holds that no living creature should go into the afterlife with parts missing. Few take this superstition seriously, but the tradition persists simply because there is a lot of flavour in the head and neck.
