Pork marries well with ginger, garlic and onions — three ingredients that are regarded as the essential basis of Chinese seasoning. This is a good Cantonese standby for those occasions when you fancy a simple meal. Be lavish with the ginger as it is the hallmark of this dish.

Ingredients

  • 250 g/9 oz pork rib-eye steak
  • 30 ml/2

Method

  1. Cut the pork into thin strips. Place these on a board and tenderize them slightly, using a meat mallet or the blunt edge of a cleaver. Rub the strips with sesame oil and set them aside for 15 minutes.
  2. Heat the vegetable oil in a wok. Add the garlic and ginger and fry for 1 minute, until pale brown.
  3. Add the pork and spring onions. Stir-fry for 2 minute
