Featured on Chinese restaurant menus the world over, this southern dish is one of the easiest to recreate at home. Bicarbonate of soda helps to tenderize beef without altering its flavour. It is important to cut meat and peppers to the same size so that they cook in the same time.

Ingredients

  • 450 g/1 lb sirloin steak
  • 1 large green bell pepper

Method

  1. Using a sharp knife or cleaver, cut the steak into thin strips. Cut the green pepper into strips of similar width and length. Put the pepper strips in a bowl and set them aside.
  2. Put the bicarbonate of soda into a shallow dish, moisten it with a little water, then add the beef strips. Using clean hands, rub the bicarbonate into the meat. Cover and set aside for
