Chilli Noodles

Street stalls and tea houses all over Hong Kong almost always have this on their menus, each establishment having a slightly different version from the next, depending on the class of diner. Humble places offer basic noodles tossed in chilli sauce with slices of roast pork. More upmarket eateries add lavish accents like oyster sauce and sesame oil and even offer wonton soup on the side. This recipe is one of the more luxurious versions.
