Also known as mustard cabbage (gai choy in Cantonese) mustard greens have thick, curved, ribbed stalks and ruffled bright green leaves. Shantou people are inordinately fond of this vegetable and usually serve it with congee for breakfast or lunch. In China, the bulk of the crop is salted and preserved.

Ingredients

  • 500 g/ lb mustard greens
  • 30 ml/2

Method

  1. Cut off any fibrous bits from the stalks of the mustard greens, then cut the stalks and leaves into bite-size pieces. Rinse and drain.
  2. Bring a pan of water to the boil. Add the greens and blanch for 2 minutes, then drain and pat dry with kitchen paper.
