Within the pantheon of Chinese herbal remedies, lotus seeds are believed to aid blood circulation and stimulate sluggish appetites, while ginkgo nuts have for thousands of years been famed for their curative properties. Both turn up in herbal soups and sweet drinks like this one.

Ingredients

  • 750 ml/ pints/3 cups water
  • 100 g

Method

  1. Put the water in a pan. Bring to the boil and add the rock sugar. Stir over the heat until it has dissolved.
  2. Taste the syrup for sweetness and add more sugar if necessary. Stir in the lotus seeds and nuts with the preserved sweet winter melon. Simmer for 20 minutes. Serve hot or cold.
