This dish from Hong Kong is traditionally made using soaked, ground whole almonds. This simplified version, using almond extract, requires less effort and gives results that are just as good. The jelly has a subtle, sweet flavour that is popular with children and adults alike.

Ingredients

  • 750 ml/ pints/3 cups cold water

Method

  1. Pour the cold water into a medium pan and add the agar agar strips. Sprinkle the gelatine on the surface. Heat gently, stirring until all the agar agar and gelatine has dissolved.
  2. Add the sugar. Simmer, stirring constantly, until the sugar has dissolved, then stir in the evaporated milk and almond extract.
  3. Rinse a jelly mould with cold water and stand
