This member of the vast cephalopod family is an important seafood and is eaten widely in most of coastal China. Squid can range in size from 2.5cm/1in long to giants of enormous size, but the best size for eating are those about 7.5cm/3in long, which are available frozen in many Chinese and South-east Asian stores. Squid cooks in moments and is delicious stir-fried in a chilli, garlic and yellow bean sauce.
