This classic dish from Yunnan, the southernmost province of western China, is simple to prepare and uses ingredients that are common throughout China: Chinese celery leaves, chicken, sesame oil and yellow bean sauce, which marry well with the strong flavour of bamboo shoots.

Ingredients

  • 200 g/7 oz bamboo shoot slices, drained and rinsed

Method

  1. Soak the bamboo shoots in cold water for 10 minutes. Meanwhile, slice the chicken into strips about 2cm/¾in wide. Slice the soaked bamboo shoots into strips or leave as thin slices if they are small.
  2. Heat the oil in a wok until you can see the barest hint of smoke curling up, then add the chicken and stir-fry for 1 minute.
  3. Add the bamboo shoots and st
