Although tripe may seem like an unusual ingredient, chefs in Yunnan are adept at combining the most unlikely foods and making them work brilliantly. Tripe is included in their cuisine as much for its texture as for its taste, and here it is combined with chicken and aromatic seasonings and sauces. The dish is traditionally cooked with a whole chicken on the bone, but using joints reduces the cooking time.
