This tart and aromatic dish is steeped in a rich vinegar sauce, which has a great affinity with bamboo shoots. Chongqing, a municipality bordering Sichuan, has a cuisine that is generally regarded as being distinct from its famous neighbour, and certainly not representative of typical western Chinese cooking. This Chongqing dish, however, has fragrant echoes of the classic Sichuan style, especially in its use of spicy chillies.
