Pork and garlic go very well together, and are a tasty combination in this cold dish. This Sichuan classic is popular in summer, when the temperature and humidity in the province can be unyieldingly oppressive. Sichuan chefs use a special local soy sauce with nuances of sugar and spice, but this product is rare outside the region, so this recipe uses a light soy sauce tweaked with a little sugar and chilli oil to create a similar flavour.
