This marinated beef dish originated from Hubei, although it is more usually cooked there using pork. However, there is a sizeable population of Muslims in western China, and this dish was tweaked to suit their religious requirements.
Cut the beef into thin slices, each measuring 2.5 cm/1 in wide by 7.5 cm/3 in long. Combine the marinade ingredients in a bowl, pour over the beef and toss to coat. Leave to marinate for 20 minutes.
Heat the oil in a wok and fry the garlic until crisp and light brown. Add the beef slices with their marinade and stir-fry for 1 minute, then add the soy sauce, sug
