A restaurant-starred dish, crispy chilli beef has earned legions of fans around the world. Although it is considered to be a Sichuan invention, it has nevertheless been adopted by other regional cuisines, and some Hong Kong chefs have even claimed that it came from their kitchens. It is actually possible that this dish originated from anywhere in China, as imperial courts were forever poaching ideas from other regions. Wherever it first originated, it is certainly a very delicious mouthful. Serve it with boiled rice, if you like.
