Grown throughout subtropical China, black rice is particularly common in Sichuan and Hunan. It is generally glutinous and has to be treated like normal glutinous rice, needing a long soak to soften the dense grains.

  • 150 g/5 oz/generous cup black glutinous rice, soaked overnight

Method

  1. Drain the rice and place in a large pan with 2 litres/ pints/9 cups water. Bring to t
