Pastes made with red beans and almonds are commonly used in Chinese sweet snacks and festive buns. Red bean paste is a typically Sichuan filling, used in many different ways, but this pancake is by far the most popular. They are eaten throughout China: in Shanghai these are called Shanghai pancakes and in Hong Kong they are named wo bing or wok pancakes. The custard powder gives the batter a good colour when fried.
