Tangerine peel is used widely in Hunan, not just for sweet dishes but also in meat and poultry recipes. Here it adds flavour to a broth of aduki beans and ginkgo nuts. Ginkgo nuts are known for their restorative properties and are often added to sweet brews.

Ingredients

  • 150 g/5 oz dried aduki beans, soaked overnight until soft
  • 1 small piece tangerin
