  • 1 pound shrimp, salt-leeched
  • 2 tablespoons peanut oil
  • 3 cloves garlic, minced
  • 1 slice fresh ginger root, minced
  • 4 scallions, minced
  • 1 tablespoon thin soy sauce
  • 1 tablespoon Shaoxing wine or dry sherry


Salt-leeching, stir-frying

  1. Heat the oil in a wok. Stir-fry the shrimp quickly to coat them.

  2. Add the garlic, ginger, and scallions, and stir-fry for a moment. Then add the soy sauce and rice wine or sherry. Continue stirring until the shrimp are cooked (about 2 minutes).

  3. Serve the shrimp immediately.

  • Serve Immediately or prepare several hours ahead and serve at room temperature as a salad course.
  • Suggested Beverage: Chardonnay or white Burgundy
