Deep-frying

  1. With hands moistened with sesame oil, form the paste into large balls between the palms.

  2. Slip the shrimp balls one by one into the 2 cups of oil at 360 degrees. When they brown (about 3 minutes), remove them with long chopsticks or a strainer.

  3. If you have the shrimp heads, fry them in the oil until they turn red (about 30 seconds) for use as a garnish.

  4. Arrange the shrimp balls and the heads on a platter.
