Here we sandwich chopped scallions between layers of pancake, then deep-fry them to make a light, flaky pastry. The process is remarkably simple, and the results are super. You can make Onion Cakes flat or rolled. Both make a fine appetizer or can be served as an accompaniment to soup.


  • Pancakes
  • 1 egg, beaten
  • Pinch of salt
  • Chopped scallions and Chinese chives or shallots, or scallions only
  • 4 cups peanut oil for deep-frying


  • Deep-frying
  • The pancakes can be prepared up to an hour ahead through step 3 and stored in tightly wrapped plastic so that they don’t dry out.
