Combine the rice and water in a large saucepan – I strongly recommend using a non-stick saucepan if you have one. Bring to the boil, uncovered, over medium-high heat, then cover with a lid and reduce to a simmer over low heat. Cook for 12 minutes, then turn the heat off and allow the rice to stand for 10 minutes without lifting the lid.
