Dried shrimp roe can be found in the fridge or freezer section of your local Asian grocer. These tiny orange specks pack an absolute wallop of punchy umami flavour, so much so that this dish requires little else. The oyster sauce and lard simply help to coat the noodles and distribute the flavour.
Cook the noodles in a saucepan of boiling water until al dente, 1-2 minutes.
Meanwhile, warm the lard in a small frying pan and combine with the oyster sauce.
Drain the noodles into a large mixing bowl and pour the lard mixture over the top. Mix thoroughly, adding more oyster sauce if required.
