A bowl of soup is a permanent fixture on the Chinese dinner table – a product of frugality, but also a way to ensure that all the nutrients from each ingredient are consumed. Pork bones are particularly flavourful and are often more affordable than chicken bones, making them a rich yet economical option for soups and stews. This stock can also be used to enhance dishes. For a clear stock with a clean flavour, it is important to blanch the bones beforehand to remove any impurities. The blanc
