Shiitake mushrooms, black fungus and fried tofu puffs provide a delightfully textural stand-in for the classic pork and prawn wonton filling over the page. Wonton wrappers come in white and yellow varieties and some are vegan. It is unwise to substitute wonton wrappers with normal dumpling or gyoza wrappers, which are too thick.
