‘Special fried rice’ (扬州炒饭) is the name used interchangeably for yangzhou or yeung chow fried rice, a protein-heavy dish that can be found in most overseas Cantonese restaurants. It uses a colourful combination of meat, seafood, egg, and vegetables that have been cut into tiny pieces, imparting a world of flavour when fried with rice.
