Congee, or ‘porridge’, is a bowl of rice with healing powers. My mum always made this as a remedy for coughs, colds or an upset stomach. She strongly believes in the healing powers of ginger, and while I seriously disliked ginger when I was younger, I now find this dish seriously delicious when sprinkled generously with soy sauce, ginger and fragrant sesame oil. Don’t forget the white pepper, either.
