This rapid-fire cooking technique is one of the easiest and most delicious ways to prepare green vegetables. Stir-frying is also the best way to retain nutritional content, and it works well with most vegetables.

Ingredients

  • 2 bunches leafy green vegetables such as spinach, gai lan (Chinese broccoli), lettuce or snow pea shoots

Method

Cut the vegetables into 3-4 cm (1¼-1½ inch) lengths, separating the stems from the leaves.

Heat a wok or frying pan until smoking and add the oil. Add the stems and stir-fry over high heat until bright green and just cooked. Add the leaves and stir-fry until wilted, 20-30 seconds. Season with the salt and serve immediately.
