Blistering, or ‘dry’ frying, is a style of stir-frying in very little oil over very high heat. The hot, dry surface of the pan blisters the skin of the green beans but leaves the interior fresh and crunchy, creating more of a toasty flavour than a roasty one. However, if you’re not confident of your pan-frying skills, you can bake the beans in the oven without any oil at 230°C (450°F) for about 10 minutes, making sure they’re in a single flat layer.
