This is a really lovely homestyle Northern Chinese dish. It’s a rustic stir-fry of crisp fried potato, soft eggplant and crunchy capsicum (pepper), tossed through a fragrant garlic sauce, with each vegetable providing a different texture.
We use a technique here called ‘head and tail garlic’ (头尾蒜) where minced garlic is added at the beginning and end of the cooking process. It provides incredible depth to the dish, offering both a warm, caramelised flavour and that exquisite fragran
