In Yunnan, mashed potato (老奶洋芋) is apparently more popular among tourists than locals. I’ve already written about how much I love Chinese potato dishes, and this dish is another shining example. It really is just old-faithful mashed potato, but stir-fried with heady spices and pickled vegetables. It’s Comfort food, but not as you know it. If I saw this on a menu in an unfamiliar city, I would definitely point to the picture and order it.
