Tofu is so terribly misunderstood in the western world. I will admit that it doesn’t have much going on taste-wise, but it is such an excellent vehicle for other flavours. Whether it’s delicate, silky curds in a simple dressing, or crispy, golden puffs in a stir-fry, tofu is easily one of my favourite ingredients.
