Also known as ‘bakwan kepiting’, this is a traditional dish from the Peranakans of Singapore and Malaysia, whose cuisine is called Nyonya. Featuring tender crab and pork meatballs in a delicate broth that has been scented with roast garlic and spiked with coriander (cilantro), it can be enjoyed simply with a bowl of steamed rice. If you are picking your own crab meat, you’ll need a fresh mud crab weighing around 1.2-1.5 kg (2 lb 11 oz-3 lb 5 oz). Alternatively, picked fresh cr
