  • 1 pound shelled oysters
  • 2 teaspoons flavored peppercorn salt

Method

  1. Rub some coarse salt into the shelled oysters with fingers. Rinse with water until clear. Drain.
  2. Dip the oysters in a pot full of boiling water only 5 seconds over high heat. Drain. (Do not wait until the water comes to boil again.)
  3. Make flour batter stirring to a smooth pasty consistency.
  4. Dip oyster in flour batter and deep fry over medium
