  • 4 oz. walnut halves
  • 1 cup water

Method

  1. Put shelled walnuts into 5 cups boiling water, boil for 1 minute. Remove and drain.
  2. Boil another cup of water in a pan. Add sugar, maltose and salt, and cook for 3 minutes. Add walnuts and boil again. Turn off heat and pour everything into a bowl. Soak for about 4 hours.
  3. Drain walnuts, then place into warm oil, deep-fry for about 3 minutes over low he
