  • 5 tablespoons oil

Method

  1. Cook the turtle in boiling water for 3 minutes. Remove, scrape scale off turtle’s back, and clean with a brush. Tear open turtle’s belly, take out entrails. Cut turtle into 12 pieces (including shell). Scald again in boiling water, rinse with cold water. Remove fat and nails of feet, then put everything in a big bowl.
